Le Bouchon, meanwhile, is a traditional bar and bistro serving classic tapas dishes such as Iberian chorizo and Andalucian squid.
Descend to the Cocktail Lounge for signature Mercer cocktails between ancient stone walls, or head up to the wooden-decked roof terrace for snacks and drinks with a view.
