In the knowIt is believed that Greek colonists brought Malvasia grape to Salina way back in 588 B.C. The wines it produces, which today range from very dry to very sweet, have aromas of pears and spice with fresh fruity flavours. Choose from a tempting menu of locally-sourced produce including the daily catch and the chef's favourite home-made cuisine. For breakfast, discover traditional Siciliy with fresh ricotta cheese yogurt and yogurt, followed by Capofaro’s freshly baked bread, handmade with the wheat grown in the Tasca family home. The concept of ‘zero kilometre’ cooking is at the heart of the hotel’s ethos, with their own vegetable gardens providing 70% of ingredients used by chef Ludovico De Vivo.

A path carved into volcanic rock leads you down to the crystalline waters of the Tyrrhenian, and scooters, cars and small boats are available to explore Salina and the surrounding islands. 
It’s the cooking school that Capofaro is most famous for though, and this the biggest enticer of all for foodies. Beyond just the techniques, the courses take guests on a journey into the history of both the ingredients and the Aeolians Islands themselves, providing a real insight into the region and its traditions.
