A rustic but luxurious retreat in the heart of the Puglian countryside, Masseria Salinola is centuries old and is surrounded by ancient olive groves. Family-run and with a warm, welcoming atmosphere, this country villa outside the town of Ostuni is all about enjoying delicious cuisine and experiencing the relaxing charms of life in rural Puglia.

Rooms at Masseria Salinola

The rooms and suites are all of various sizes, due to the historic building they are housed in, and come with plenty of character and style, combining luxury and simplicity, with rustic and antique touches. They are supremely comfortable, yet retain the traditional character and atmosphere of the original farmhouse. They have beautiful stone walls and materials that create a beautiful decorative effect, such as lime and opus signinum (or 'cocciopesto'), a traditional material similar to earthenware.

Each room and suite is different: the Acquaro room features a private hammam, while the Old Shelter has a steam bath. The Studio Apartment, suitable for 4-5 people, has a small kitchen area so guests can self-cater if they wish.

Food & drink

Masseria Salinola's atmospheric restaurant serves delicious menus based on the unique traditional cuisine and flavours of Puglia, featuring vegetables and other fresh produce from the hotel's gardens, and extra virgin olive oil produced from the surrounding groves.

Some of the classic rural dishes on offer include orecchiette con cime di rapa, a typical Apulian homemade ear-shaped pasta, pot-cooked mashed broad beans, and oven-baked rabbit with Mediterranean flavours (including tomatoes, olives, capers and rosemary). After dinner, enjoy the hotel’s own delicious Rosoli, a sweet Italian liqueur, made with herbs from the surrounding farmland.

Cooking lessons are on offer throughout the year with the restaurant's expert chefs, giving you the opportunity to learn how to cook traditional Puglian dishes, including fresh focaccia and pasta. This region is famous for its olives, and during harvesting season in the autumn you can learn about the process by which they are collected, pressed and turned into the highest quality extra virgin olive oil.

Facilities

There is an outdoor pool, a large outdoor Jacuzzi and a solarium. Guests can also unwind with a massage. The hotel does not have a designated spa area, but some of the rooms and suites do: the Old Shelter has a private steam bath and the Acquaro Room has a private hammam. The Massaro Suite features a Jacuzzi.

Masseria Salinola is ideally placed for visiting this unspoilt corner of the heel of Italy, especially the fabulous 'White Town' of Ostuni, with its citadel, cathedral and the Bishop's Palace, among many other fascinating sights in the region. One of the best ways to explore the area is by bike, and this is a fully bike-friendly establishment, with a bicycle garage, guides and routes, and mountain bikes available for guests.
