Sense of place

Built in and around the early 19th-century Hatherley House, the Hatherley Birrell Collection combines a historic, colonial air with the contemporary edge provided by the new pavilions and the modern artwork which adorns the property throughout. The English gardens provide a pretty backdrop.

Rooms at Hatherley Birrell Collection

The hotel’s newest rooms are the two Muse Garden Pavilions, which combine a modern aesthetic with the classical tradition of the garden folly. Filled with art and with roofs inspired by origami, they also feature beautiful views of the garden through their moon windows. Elsewhere, Magnolia Garden Pavilions also feature stunning views through huge sliding glass walls, and outdoor bathtubs hewn from volcanic stone. A more historic choice is the Ballroom, housed in the 1830s ballroom of Hatherley House, which offers traditional luxury with its French doors, high ceilings, Italian marble fireplaces, and ornate, original gilt mirror. The traditional feel is complemented by more contemporary artwork, with photographs of performances by modern dance troupe Tasdance adorning the walls.

Food and drink

Delicious locally sourced produce is provided for breakfast each morning, with your own kitchenette so you can self-cater at your leisure. Optional purchases in the minibar also include Tasmanian wine, cheese and beer. Launceston is arguably the food and wine capital of Tasmania, and there are numerous top-class dining options in the city. The pick of the bunch is Stillwater, which serves up relaxed breakfasts and lunches and lavish dinners with a focus on the freshest seasonal produce – unusual local dishes you can look forward to include Tasmanian blacklip abalone and seared wallaby.

Launceston is Tasmania’s second city and home to some 75,000 people, but it’s surrounded by pristine wilderness. The Cataract Gorge, run through by the picturesque South Elk River, is a 10-minute walk from the city centre; stunning views are afforded from the Alexandra Suspension Bridge. Above the gorge is the beautiful Lake Trevallyn, which, although artificial, is a great spot for walking, biking and going for a dip. In town, the Queen Victoria Museum & Art Gallery is a great spot for culture vultures to enjoy a range of artwork past and present.
