Food and facilities

Inspired by the pick of the field, wood, river and sea, dining in Scotland’s only two-Michelin star restaurant is an experience in itself. Trained in France, head chef Andrew Fairlie oversees the eponymously-named restaurant, creating a menu that blends the best of French and Scottish cooking, tying the meal together with an emphasis on outstanding ingredients and fine local suppliers. A highlight among the many courses is Andrew’s signature smoked lobster, with its intense smokiness coming from a twelve-hour infusion over whisky barrels.
