A rustic but luxurious retreat in the heart of the Puglian countryside, Masseria Salinola dates from the 16th century and is surrounded by ancient olive groves. Family-run and with a warm, welcoming atmosphere, this country villa outside the town of Ostuni is all about enjoying delicious cuisine and experiencing the relaxing charms of life in rural Puglia.

Rooms at Masseria Salinola

Rooms and suites at Masseria Salinola combine luxury and simplicity, supremely comfortable yet retaining the traditional character and atmosphere of this centuries-old farmhouse. Furnishings and decorations are often rustic and antique and each of the rooms and suites is different: the Acquaro room features a private hammam, while the Old Shelter has a steam bath. The Studio Apartment, suitable for 4-5 people, has a small kitchen area so guests can self-cater if they wish.

Food & drink

In the hotel’s atmospheric dining room, delicious traditional Puglian cuisine is served up using fresh produce from the hotel’s gardens and olive oil from the surrounding groves. Some of the classic rural dishes on offer include orecchiette con cime di rapa (homemade pasta) and oven-baked rabbit. After dinner, enjoy the hotel’s own delicious Rosoli, a sweet Italian liqueur, made with herbs from the surrounding farmland.


There is an outdoor pool where guests can enjoy massage treatments, an outdoor Jacuzzi and a solarium. The hotel does not have a designated spa area, but some of the rooms and suites do: the Old Shelter has a private steam bath and the Acquaro Room a private hammam.  The Massaro Suite features a Jacuzzi.

Activities at Masseria Salinola

Cooking lessons are on offer throughout the year at Masseria Salinola, where you can learn how to cook traditional Puglian dishes using fresh produce from the hotel’s land, including how to make fresh focaccia and pasta. This region is famous for its olives, and during harvesting season in the autumn you can learn about the process by which they are collected, pressed and turned into the highest quality extra virgin olive oil.
