Created by the imagination of celebrated chef, Jean-Luc Lefrancois, the chateau’s two restaurants are destinations in themselves. The main event for gourmands, take a seat on the sun-baked panoramic terrace and dive into Le Saint-Martin’s Michelin-starred seasonal menu of sea bass in a pistachio crust with Nicosia’s olive polenta and smoked salt roasted saddle lamb with wild mushrooms. Alternatively, you can explore the Mediterranean flavours of L’Oliveraie in the shaded olive grove or have light snacks and smooth cocktails in Le Rossini bar.

Entrenched by the green gardens, white wisteria and billowing muslin, the Saint-Martin Sisley Spa is a secluded oasis that only reveals itself as you approach the enchanting summer house. Unwind in the lavender garden’s gloriette before having an all-encompassing body massage to work out any sore or tight spots. With the infinity pool located near the spa, you can almost roll off the treatment bed and into the pool or if you are the more active type, put on your whites and head to the tennis courts to battle the pros.
