Although she has been to every corner of Europe, Gina is head over heels in love with Italy and Greece. Her fondest memories are of doing a Vespa tour and drinking wine in a 15th-century BC crypt in Rome, discovering hidden coves and beaches in Crete and watching the sun set over the caldera of Santorini.

Gina has stayed at some pretty unique places, including Matera's rustic cave-hotel Sextantio, which has candles instead of electricity, and the Lupaia farmhouse in Tuscany, where you can learn to cook authentic Tuscan cuisine in a mamma-style kitchen.

Her adventurous streak has taken her to the frozen landscapes of Iceland where she snorkelled between tectonic plates, hiked across dramatic glaciers and flew over volcanoes by helicopter. Other unique experiences she has ticked off the travel bucket list include visiting the Lofoten Islands in Norway, where she crossed the Arctic Circle and watched the Midnight Sun hanging low in the sky as the clock chimed twelve on an almost-deserted beach, and unwittingly intruding on a couple's proposal in the process.

We swear, in spite of this she is the maker of countless romantic moments, as well as great adventures and family holidays, here at Exsus.

Watch the Northern Lights from a thermal pool in Iceland

Deplar Farm in Iceland is one of the most magical places I've stayed at. The cherry on top of the cake? For me it has to be the outdoor thermal pool, where you're given wrist and ankle floats to watch the Northern Lights above.


Revel in the rugged cliffs, lemon groves and colourful villages of Italy

I'd recommend combining stays in the quaint hilltop town of Praiano, A-lister favourite Capri and the hilltop town of Ravello. You'll be surrounded by traditional trattorias, secret coves and century-old lemon groves.

One of the reasons I love Europe is for the picture-perfect views you get from your bedroom window. From quaint boltholes overlooking the Amalfi Coast to moon-like lava landscapes, read on for hotels in spectacular settings. 


Discover the best hiking spots in Norway

My favourite travel memory is exploring the Aurland Valley in Norway. The best part was going on a scenic waterfall hike and stopping to take in views of the valley below over delicious cinnamon buns.
