Start the day off right with breakfast in the Cube Cafe, just underneath the main hotel building, where you can sit overlooking the harbour. Come dinnertime, head to Mud Bar and Restaurant, which serves up a broad range of dishes from around the world, washed down with Tasmania’s best wines.

Only half an hour outside Launceston lie the wine valleys of Tamar Valley, known for its cool climate wines, where you can visit family-run vineyards for a tour and tasting. In Launceston itself, wander the streets with their impressive array of Victorian, Edwardian and Art Deco architecture and enjoy the laidback, country town atmosphere; outside of town there’s the Cataract Gorge, with its hiking and bushwalk trails and the world’s longest single span chairlift.
